Stable Solution of Ammonium Caseinate

Stable Solution of Ammonium Caseinate

How can one produce a stable concentrated solution of ammonium caseinate?

Various polysaccharides, particularly xanthanc, a high molecular weight natural carbohydrate have proved themselves as additives which effect thickening which is stable in the presence of basic or acid media and salts. The action of most of the (numerous) thickeners is more or less dependent on temperature, pH and other components.

Cellulose derivatives could also be suitable for this special case. Where inorganic products can be considered, suitable types can be found amongst modined montmorillonites. Inorganic thickeners are less sensitive than organic types to changes in pH.
